Holiday-Bake Hop-Whacky Cake


This is my mother’s best friend’s recipe. Jeanie Pryor, she has always been more like my second mom to me. She knew I loved this cake and would make it for me when ever she could.

My mom also made it for my birthday every year and my kids love it too. So it is a tradition in our family.

Here is the recipe.

Ingredients for the cake:

1 1/2 cups of flour

1 cup sugar

1 teaspoon baking soda

1/2 teaspoon salt

1/3 cup of Hershey’s cocoa powder

1/2 cup of vegetable oil

1 teaspoon of vanilla

1 teaspoon of vinegar

1 cup of cold water

Mix flour, sugar, baking soda, salt, and cocoa together in bowl. Make three holes in the dry ingredients while still in bowl. Put vegetable oil in one hole, vanilla in another hole, and the vinegar in the last hole. Pour cup of cold water over top of all ingredients and mix together well. Put in 9×13 un-greased pan and bake for 20 min. @ 375 degrees…check with toothpick to make sure it’s done.

While cake is baking make the icing Ingredients for Icing:

1/3 cup of milk

1 cup of sugar

1/2 cup of margarine

1/3 cup of Hershey’s cocoa powder

Mix together and boil for 3 minutes. When the cake is still hot, poke holes in cake ALL OVER with fork and pour icing (still hot) over entire cake.

Best served warm with your favorite ice cream!
